My family loves football, especially the Pittsburgh Steelers, and we're super excited
about the game tonight! Go Steelers!
Nachos are one of our favorite football foods, so I thought I would change them up a bit
and make them with seasoned waffle fries and salsa chicken. These delicious bites begin
with my slow cooker salsa chicken made with Sabra Homestyle Salsa and boneless chicken
breasts. This recipe is super easy and great for tacos, taco salad and of course, nachos.
I'm a huge fan of Sabra and love how fresh their Homestyle Salsa tastes. We also love
Sabra hummus, guacamole and dips for our football parties too.
Once the slow cooker salsa chicken is done and the waffle fries are baked, the nacho bites
are super easy to put together. You could also just layer everything on a platter, but I love
making bite size appetizers.
To assemble I topped each waffle fry with a little salsa chicken, black beans, cheese and
delicious guacamole. Serve with a little more salsa and viola, football food at it's best!

Salsa Chicken Nacho Bites
3 (1.25 lb.) boneless chicken breasts
1 C Sabra Homestyle Salsa, plus extra for dipping
1 package Seasoned Waffle Fries
1 can black beans, drained and rinsed
1 cup Mexican cheese blend
1 8 oz. container Sabra Classic Guacamole
Using a slow cooker cook chicken breasts with one cup of salsa on high for 4-5 hours,
or until chicken shreds easily with a fork. Using two forks, shred chicken in the slow cooker.
Keep on warm until ready to use.
Preheat oven to 425 and bake waffle fries according to package directions.
Assemble nacho bites by layering chicken, black beans and cheese on each baked waffle fry.
Place prepared nacho bites back onto a baking sheet and place under a broiler just until
cheese melts. Top with guacamole and serve with additional salsa.
Enjoy!
Note - You will have extra salsa chicken left over. Keep leftover chicken refrigerated in an
air-tight container or freeze to use at a later date.
