Cookies & Cream Mini Parfaits are basically fancy little Oreo Dirt Cups.
Instead of gummy worms I added a bright red raspberry to each one to make them look
more elegant and I served them in 2 oz. clear, plastic dessert cubes each with a mini spoon.
I placed the mini parfaits on a galvanized steel serving tray and guests went crazy for them.
Cookies & Cream Mini Parfaits would be perfect for a wedding, anniversary party or
shower. I served them at Madison's college graduation party and they were a huge hit!

Cookies & Cream Mini Parfaits
2 - 3.4 oz. boxes white chocolate or vanilla pudding
3 1/2 C milk (I used 2%)
8 oz. cream cheese, softened
1/4 C butter, softened
1 C powdered sugar
12 oz. container of Cool Whip
1 package Oreo cookies
In a food processor pulse cookies (I used 2 rows of cookies) into fine crumbs; set aside.
In a large mixing bowl, whisk pudding and milk until smooth. Fold in Cool
Whip and set aside.
In a separate bowl or a stand mixer bowl, mix cream cheese and butter until smooth.
Add powdered sugar and beat until smooth. Fold the pudding mixture into the cream
cheese mixture. Spoon into a piping bag fitted with a Wilton 1M tip.
Add a little less than 1 tablespoon of cookie crumbs into each 2 oz. plastic dessert cup.
Pipe cream onto cookies. Top with more crushed cookies and a fresh raspberry.
Serve each dessert cup with a mini spoon.
