Football season is here! To celebrate I've joined with a group of football-loving food
bloggers to bring you lots of football inspired recipes. I don't know about you, but to
me football games are all about the food!

As I have mentioned before, we are big Pittsburgh Steelers fans and I love making black
and yellow inspired desserts for the big game. Today's Game Day Cookie Cups are a
twist on my Fruit Pizza Cookie Cups. I used the same recipe for the cookie base, but
instead of a cheesecake filling, I used vanilla buttercream. If you prefer to add some
chocolate to the mix, you could make my Chocolate Chip Cookie Cups and decorate
them with your favorite team colors. Either way you can't go wrong!

Cookie Cups:
3/4 C butter, at room temperature
1 C sugar
1 large egg
2 tsp. vanilla extract
2 C all-purpose flour
1 tsp. baking soda
2 tsp. corn starch
To make cookie cups coat 2 mini muffin pans with cooking spray.
Preheat oven to 350 degrees.
In the bowl of a stand mixer, cream butter and sugar together until light
and fluffy. Add the egg and vanilla and beat until well combined.
Add the flour, baking soda and corn starch, mixing just until combined.
Using a small cookie scoop (1 tablespoon) drop dough into each cup of your mini muffin
pans. Bake for about 8 minutes. Once cookie cup are lightly browned, remove from oven
and use a mini tart shaper to shape into a cup.
Cool in pan for 5 minutes before removing cookie cups to a wire rack to continue cooling.
Buttercream Frosting:
1/2 C (1 stick) unsalted butter, at room temperature
3 C confectioners sugar
1 tsp. vanilla extract
1 T heavy cream or milk
team colored chocolate coated candies
sprinkles
candy footballs
In the bowl of a stand mixer, cream together butter, sugar and vanilla for about 5
minutes. Slowly add heavy cream and whip for another 3 - 5 minutes or until light
and fluffy.
Pipe buttercream into cooled cookie cups. Decorate with candy and sprinkles.
