I have been known to eat an entire bag of granola in one sitting. I mean basically it is
just another form of oatmeal and you know how much I LOVE oatmeal!

I have always made homemade granola with rolled oats and a variety of mix-ins, but when
another blogger I follow used cereal in place of some of the rolled oats - I thought what a
great idea! I opted for Kashi Heart to Heart cereal because that's what I had in the pantry
and it turned out so good! I love the added crunch cereal provides and Kashi Heart to
Heart only has 120 calories per serving (3/4 cup) versus 210 calories for a half cup of
rolled oats. Healthy, delicious and lower calories - my kind of granola!

Small Batch Healthy Granola
1 C Kashi Heart to Heart Cereal
1/2 C rolled oats
3 T almonds, chopped
2 tsp. ground flax seed
1 tsp. chia seed
1 T melted coconut oil
1 T honey
2 tsp. pure maple syrup
1/4 tsp. ground cinnamon
Preheat oven to 250 degrees. Line a quarter baking sheet with parchment paper.
Combine cereal, oats, almonds, flax and chia and cinnamon in a mixing bowl.
In a small bowl combine coconut oil, honey and maple syrup.
Pour wet ingredients over dry and stir until dry ingredients are evenly coated.
Spread granola evenly onto the parchment lined baking sheet.
Bake for 25-30 minutes or until lightly browned, using a spatula to toss granola
during the half way point.
Remove from oven and place baking sheet on a wire rack to cool.
Store granola in an airtight container for up to one week.
