Mini Blueberry Galettes #SummerDessertWeek

We just returned from our annual summer vacation to Disney's Hilton Head Island Resort
and we had the best time! We've been going there almost every year for the past twenty
years and we just love it! I posted lots of photos on my Instagram if you want to see some
of our fun.

Now that summer is in full force, our Farmer's Market is bursting at the seams with garden
vegetables, beautiful flowers and fresh berries. I just couldn't resist picking up some
blueberries for these mini blueberry galettes. Summer dessert couldn't be any easier!



I used a frozen puff pastry sheet for the crust and the blueberries are sweetened with
Dixie Crystal's sugar and a touch of Adam's vanilla extract for added flavor.

Serve the galettes with homemade vanilla ice cream or whipped cream to make them
even more delicious.

Mini Blueberry Galettes

1 Puff Pastry sheet, thawed
1 heaping cup blueberries, fresh or frozen
2 T Dixie Crystal's granulated sugar, plus extra for sprinkling
1 T cornstarch
half of a lemon
1/2 tsp. Adam's vanilla extract
pinch of salt
1 whole egg
1 T water
confectioners sugar for sprinkling

Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silicone
baking sheet. 

On a lightly floured surface, roll out puff pastry into a rectangle. Cut in half lengthwise
and then cut those two pieces in half so that you have four puff pastry squares.

In a bowl stir together blueberries, sugar, cornstarch, 1 tsp. lemon zest, juice of half of
the lemon, vanilla, and salt. Evenly distribute the blueberry mixture between the four
puff pastry squares. Gently fold over the edges of each, folding the dough in on itself
to create a small rim of crust.

Make an egg wash by beating together the egg and water. Brush edges of each galette
with the egg wash and sprinkle the crust with sugar.

Bake for 12-15 minutes until golden and bubbly. Remove from the oven and allow
galettes to sit on the pan for 5 minutes. Remove from the pan onto a serving plate.
Dust with powdered sugar.

Serve warm or at room temperature with a dollop of whipped cream or vanilla ice 
cream.

  8. I made these yesterday and they are indeed very tasty, however ....

    I did make a mistake, I used a silicone sheet on a cookie sheet that did not have high sides and a bunch of juice rolled off the edge and made a mess in the oven - thank goodness for self cleaning ovens. Next time I will use cookie sheet with sides and parchment paper wide enough to come up those sides - this should help cleanup.
