Quinoa Pilaf with Pine Nuts
Since I have been making a lot of sweets lately, I decided to try a new and healthy side dish for dinner. I have never made any recipes with Quinoa, but I have heard that it is very good for you and high in protein. When cooked quinoa has a light and fluffy texture with a slightly nutty flavor and is a wonderful alternative for rice or couscous. I found this recipe on the food network and decided it would be an easy recipe to try. I am so glad that I did....Bob and I both thought it was really good and will definitely be added to the "make again" recipe pile. You can find the recipe here if you would like to try it too.
