I am so thankful that my parents plant a huge garden every spring. I love being able to go to their farm any time I like and help myself to all of the yummy veggies. On my last visit I picked up some zucchini, cucumbers and onions. I love zucchini and I make a really good zucchini casserole, which I will post the recipe for on another day. This weekend I decided to make my zucchini muffins. Here is the recipe if you would like to try them yourself - enjoy. Zucchini Muffins 3 eggs 2 C canola or vegetable oil 1 1/3 C sugar 1/2 C orange juice 2 1/2 C flour 2 tsp cinnamon 2 tsp baking powder 1 tsp baking soda 1 tsp salt 1/2 tsp ground cloves 1 1/2 C shredded zucchini Combine eggs, sugar, oil and orange juice in a mixing bowl and beat with an electric mixer until blended. Add the remaining ingredients, except for the zucchini and mix well. Now fold in the shredded zucchini. Fill greased or paper lined muffin tins 2/3 full with muffin mixture. Bake at 350 degrees for 20-25 minutes or until done.
Mmm, you're right this one appeals to me much more than the ones with chocolate. Thanks for sharing. I've just added zucchini to my grocery list.
