Healthy Chocolate Chip Oatmeal Cookies

I'm all about a cupcake or two every now and then, but for the most part I try to eat healthy, whole foods.
Healthy Chocolate Chip Oatmeal cookies have no flour, butter or sugar and actually taste delish!



















Filled with good for you ingredients like chia seed, ground flax, hemp seed and oats, these
cookies are the perfect little snack that you won't feel guilty about eating!

I like to store them in the freezer and then pack one or two in my lunch to satisfy my
afternoon sweet tooth :)






















Healthy Chocolate Chip Oatmeal Cookies

1/2 cup coconut oil (melted)
1 cup natural peanut butter
1/2 cup honey (this makes them lightly sweet, add more if you prefer a sweeter cookie)
2 large eggs
2 tsp. pure vanilla extract
3 cups rolled oats (not quick cooking)
1 cup unsweetened shredded coconut
1/4 cup ground flax seed
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. ground cinnamon
1/2 cup dark chocolate chips
1/4 cup chia seed
1/4 cup hemp seed (optional)
1/2 cup chopped almonds (optional)

Preheat oven to 350 degrees.
Line a large baking sheet with a Silpat or parchment paper.
In a large mixing bowl combine oats, coconut, flax, baking soda, baking powder, salt and cinnamon; set aside.
In the bowl of a stand mixer, combine coconut oil, peanut butter and honey.
Add eggs and vanilla and mix on high for 2 minutes.
Slowly add the dry ingredients to the wet; mixing just until combined.
Stir in chocolate chips and almonds.

Using a medium cookie scoop, drop mixture onto the baking sheet.
Flatten them slightly with the back of a small spatula or spoon. 
They will not spread when baking.
Bake for 10 minutes.
Cool on a wire rack.

Makes approximately 30 cookies.
