Texas Caviar
In the South, eating pork, collard greens and black-eyed peas on New Year's Day
is believed to bring prosperity and good luck in the new year.
I'm not one for pork and collard greens, so I'll be having my black-eyed peas in
delicious Texas Caviar.
Texas Caviar is a tasty, thick salsa perfect for dipping.
It's packed with black beans, black-eyed peas, corn and more.
Texas Caviar is so hearty I can almost make a meal of it!
If you're in need of an easy appetizer for New Years, Texas Caviar is always a hit!

Texas Caviar
1 can black beans, drained and rinsed
1 can black-eyed peas, drained and rinsed
I can corn, drained
1/2 purple onion, chopped
1 cucumber, chopped
1 green pepper, chopped
1 large jar of salsa
fresh cilantro, chopped
Mix all ingredients in a large bowl.
Serve with tortilla chips.
