Healthy Oat and Fruit Pizza for One
After dinner I always crave something a little sweet.
Usually I'll have a small piece of dark chocolate, but tonight I was craving something fruity.
I wanted to keep my treat as healthy as possible, so I decided to make a Gluten-Free oat crust.
Oats are my fave!!
This simple crust is made from just 4 healthy ingredients!
Rolled oats, banana, almond flour and agave.
After baking, I topped the crust with fresh fruit and chopped pistachios.
Next time I think I'll add some coconut flakes or mini chocolate chips.
Healthy Oat and Fruit Pizza was the perfect dessert to curb my sweet tooth!
I ate half for dessert and saved the other half in the fridge for breakfast the
next morning.
It was delicious!

Healthy Oat and Fruit Pizza for One
Crust:
1/2 C Bob's Red Mill Gluten-Free Rolled Oats
2 T almond flour
1 ripe banana, mashed
1 T agave nectar or honey
Topping:
1 5.3 oz. Stonyfield Greek Yogurt, plain or vanilla ( I used about 1/2 of the container)
fresh fruit (I used strawberries, pineapple, blueberries and raspberries)
chopped pistachios
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper or a Silpat.
In a small bowl, combine all ingredients.
Flatten oats and form into a circle.
Bake for 10-12 minutes on one side. Flip the oats and bake an
additional 8-10 minutes or until lightly browned.
Cool and then top with Stonyfield Greek Yogurt, fresh fruit and
chopped nuts (I used pistachios).
Serves one.
