peanut butter cup in the middle?
Well I had the best idea ever and made them in a standard size muffin pan with a regular
size Reese's Cup. Why have I not done this before?!?!
You get more cookie, more peanut butter cup goodness and they make the cutest little
sweet treat to give to friends! They would be perfect for a bake sale or party favor.
Peanut Butter Cup cookies are one of my family's favorite cookies and they just got
bigger and better!
Peanut Butter Cup Cookies
1 1/4 C flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 C smooth peanut butter
1 stick butter, softened
1/2 C sugar
1/2 C brown sugar
1 large egg
18 regular size Reese's Peanut Butter Cups, unwrapped
Preheat oven to 350 degrees.
Spray two 12-cup muffins tins with cooking spray.
Whisk together flour, baking soda, baking powder and salt; set aside.
In the bowl of a stand mixer mix the peanut butter and butter.
Add both sugars and mix until combined. Add the egg and then slowly
add in the dry ingredients, mixing just until combined.
Using a medium size (2 T) cookie scoop, drop cookie dough into
prepared muffins cups. Bake for about 15 minutes or until cookies are
golden brown on the edges. Remove them from the oven and place a
peanut butter cup in the center of each cookie, pressing down gently.
Cool on a wire rack or place the muffin pan in the freezer for 5 - 7
minutes to help them set more quickly. Once they have cooled and
the peanut butter cup has hardened, remove them from the pan.
Keep in an airtight container or wrap individually to give to friends.
