I hope you had a wonderful Christmas filled with family, friends and lots of treats!
We spent the holiday here in Virginia where the weather was cloudy, a little rainy,
and unseasonably warm. I did share some of our Christmas on Snapchat (Pinkmixer),
but other than that I don't think I took any other photos, which is crazy unusual for
me!
I don't really make resolutions, but I do have many things I want to accomplish next year.
What are you doing for New Year's Eve?
We are keeping it pretty low key and spending the evening with some friends. I can't
wait to see them and catch up. Hopefully a few of them will drop by before New
Year's Eve, so I always try to have some good cheese, crackers and a bottle or wine
or two ready to go. My daughter discovered Merlot BellaVitano cheese this summer and
it is so good! I buy it at Costco and everyone always loves it.
This Le Creuset round platter with wooden insert is perfect for serving cheese and
crackers. The cute cheese markers let your guests know what types of cheese you
are serving and I love that I can just use a dry erase marker on them! The platter
is also great for fruits or veggies too. And how about that wine carafe!! I love it!
Another cheese I love serving around the holidays is baked brie. This soft, rich, creamy
cheese is so delicious and perfect for special occasions. For this recipe I paired it with
strawberries roasted in maple syrup and olive oil. Roasted strawberry baked brie looks so
pretty in the Le Creuset camembert baker. Caribbean blue is my favorite Le Creuset color!
For the toasted bread rounds I just brushed them with olive oil and baked them in a 400 degree
oven for 7 - 8 minutes. The crunchiness of the bread goes well with the soft, warm brie.

Roasted Strawberry Baked Brie
1 C strawberries, quartered
2 T maple syrup
1 T olive oil
Kosher salt
1 (13.4 oz.) Brie cheese round
Crackers or toasted bread
Preheat oven to 400 degrees. Line a small baking sheet with
parchment paper.
In a small bowl, toss strawberries in maple syrup, olive oil and salt.
Pour them onto the prepared baking sheet and bake for 20 minutes.
Remove brie from the wrapper and place it in a round camembert
baker. Bake for 20 minutes or until the crust is light brown. Let
it cool for a few minutes before slicing off the top with a knife.
Top with warm strawberries and sauce. Serve with toasted bread
rounds or crackers.
