We have eating watermelon like crazy this summer! I've been buying one every week
from Costco and so far each one I have purchased has been delicious! I know you're
supposed to knock on it or something like that, but we just grab the one that we think
looks good and so far we have been lucky.
I cut the watermelon up into cubes as soon as we get home so that we have it to snack on
all week. Watermelon is such a refreshing treat! I've been packing it in my lunch for
work too.
As I was making dinner, I decided to mix up a quick watermelon salsa to serve over our
roasted salmon. I love the color and freshness it adds to the meal! I can see myself
making this several more times over the summer!
Watermelon Salsa
2 C watermelon, cut into small chunks
1 small cucumber, sliced and quartered
3 T red onion, diced
juice of 1 lime
2 T fresh cilantro
2 T fresh mint
salt and pepper
Combine watermelon, cucumber, onion, juice of one lime, cilantro and
mint into a bowl. Season with salt and pepper.
Serve over roasted salmon.
