I'm soaking up the last few days of summer and enjoying every minute of pool time
and porch sittin' around here. It's going to be gone before we know it!
Costco had seedless watermelons on sale for $3.99 this week, so I grabbed one to slice
up to pack in our lunch bags for work. As I was doing this I had the great idea to use
some of the watermelon cubes to make watermelon slushies to enjoy by the pool.
I wish I would have done this earlier in the season because they are so delicious and
refreshing! The watermelon slushies would be even better with a little vodka added
to them, but I didn't have any. Oh well - they were still a perfect summer pool treat!

5 C seedless watermelon cubes
1 C ice
3 T sugar
juice of one lemon or lime, if desired
Combine ingredients into a blender and blend until smooth.
Serves 2.
