My parent's garden is going strong and my mom has been supplying me tons of zucchini.
I have been freezing zucchini for soup this fall and making veggie quesadillas and
chocolate chip zucchini bread too. I love zucchini so much and would love for you to send
me your favorite zucchini recipes!
Zucchini pizza bites are a delicious snack or summer party appetizer.
I have even served them as a side dish with grilled chicken for dinner - delicious!
I'm going to be so sad when zucchini season is over!
Zucchini Pizza Bites
2 large zucchini, cut into 1/4 inch slices
8 oz. jar pizza sauce
8 oz. pkg. mozzarella cheese
Mini pepperoni (I used turkey pepperoni)
1 tsp. Italian seasoning
olive oil
salt and pepper
Preheat oven to 400 degrees.
Spray a baking sheet with olive oil cooking spray.
Place zucchini rounds onto a prepared baking sheet; drizzle with olive oil
and sprinkle with salt and pepper. Roast zucchini in the oven for about
5-7 minutes. Using a fork, flip zucchini slices and top with a little pizza
sauce, mozzarella cheese and mini pepperoni. Return baking sheet to the
oven and bake for another 5-7 minutes or until cheese is bubbly and melted.
Sprinkle with Italian seasoning if desired. Serve warm.
