I have been craving pancakes on Sunday mornings for some reason. A couple of
weekends ago I made Sprouted Wheat Blueberry Pancakes, which were absolutely
delicious, but on this particular day I wanted simple and easy.
3-Ingredient Pancakes only require one ripe banana, one large egg and 1/4 cup of
your choice of flour. It doesn't get much easier than that!
I used sprouted wheat flour this time, but sometimes I use oat flour or regular
whole wheat flour. Use whatever you like - it all works.
I'm not going to lie, 3-ingredient pancakes, do not taste exactly like regular
pancakes, but I think they are delicious and they are healthier too!

3-Ingredient Healthy Pancakes
1/3 C mashed banana
1 large egg
1/4 C sprouted wheat flour (or any other type of flour)
In a small bowl mash one ripe banana. (about 1/3 C)
Add egg and flour, stirring to combine.
Preheat griddle or pan and spray with cooking spray.
Using a large cookie scoop, drop batter onto the hot griddle.
Cook for about 2 minutes or until golden brown, flip pancakes and cook for
another 1-2 minutes. Makes 4 small pancakes.
Serves one.
