Most of the time when I make muffins for my family I make them from scratch.
I usually have all of the ingredients on hand anyway, so why not.
But sometimes I'm out of one key ingredient, and thats when I'm happy I keep muffin
mix on hand.  As you all know, I am a huge fan of Bob's Red Mill products, and although
we don't have to use gluten-free products, I love Bob's Gluten-Free Muffin Mix.



I can't tell much of a difference in the taste or texture at all between this mix and a regular
muffin mix and it's so versatile and delicious.  I added dark chocolate chips to the
muffins this time, but sometimes I'll add berries and sometimes I'll get wild and add both :)

A few weeks ago I came up with the bright idea to layer my favorite Stonyfield yogurt
with fresh berries and small cubes of chocolate chip muffin to make a yogurt, fruit and
muffin parfait. Best idea ever!

I used a recycled jelly jar because I love repurposing glass jars, but you could totally do
the same thing in a mason jar or plastic container.

Yogurt, Fruit and Muffin Parfait

1 chocolate chip muffin, cubed (I used Bob's Red Mill)
1 tsp. chia seed
1/2 C Stonyfield Whole Milk vanilla yogurt
1/4 C strawberries, sliced
2 T blueberries

In a clear glass or mason jar, layer cubed muffin, yogurt, chia seed, and fruit.
Repeat with another layer.

Serves one.
