A few months ago I broke down and purchased two mini bundt cake pans with a gift card
that I had been carrying around forever. My first batch of mini bundt's turned out so cute
that I couldn't stop thinking about different recipe combinations to try!
Oreo cookies are one of our all time faves, so today I've added oreo cookies to white
cake mix to create cookies 'n cream mini bundt cakes. Although I did cheat by using
a boxed cake mix, I did go all out with real Dixie Crystals sugar, Land O'Lakes butter
and Adams vanilla extract for my buttercream frosting! Then I topped the creamy
frosting with crushed cookies, slices of fresh strawberries and mint to make them extra
pretty. Yum!

This batch of mini cakes went to my friends at our local Sheetz convenience store.
I hook them up with sweet treats from time to time and they keep me happy with

Mini Cookies 'n Cream Bundt Cakes
1 box white cake mix plus ingredients on box to make cake
24 cream filled chocolate cookies, quartered (I used Oreos)
Preheat oven to 350 degrees. Spray mini bundt pans with floured cooking spray.
Prepare cake as directed on package.
Gently fold quartered cookies into the cake batter. Spoon batter into prepared
mini bundt cake pans.
Bake for 12-15 minutes or until a toothpick inserted comes out clean.
Remove from oven and let the cakes cool in the pan for a few minutes before
removing cakes to a wire rack to continue to cool.
Frost cooled bundt cakes with buttercream frosting. Top with crushed cookies,
chopped strawberries and mint leaves.
Yield - 12 mini cakes

Vanilla Buttercream Frosting:
1/2 cup unsalted butter, at room temperature
1 - 16 oz. box Dixie Crystals powdered sugar
1 tsp. Adams vanilla extract
1-2 T milk or heavy cream
In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on
medium speed until smooth. Turn the speed to low and slowly add the powdered
sugar until it is completely mixed in. Add vanilla and heavy cream. Turn the mixer
up to medium speed and mix for 2-3 minutes or until light and fluffy.
Enjoy!

I love that you treat your convenience store workers! Before we got our Sonic ice machine, I was in one of ours daily as well. I bet they were so excited for your bundt cakes!

DeleteI've noticed the mini bundt cake pans at the store before, but have been undecided on whether I should get some. Yours turned out really cute! My daughter loves cookies and cream flavored desserts, I'll have to make her this recipe soon.
