I've been harvesting the last of the zinnia's out of my mom's garden these past few weeks.
I love them so much and am going to miss having them in the kitchen. They really
brighten up the house!
Last weekend I whipped up a batch of superfood cereal bars to take to work as a mid-
morning snack and they were so good, I made another batch a few days later!
These healthy and delicious bars are packed with super foods like sun-dried goji berries,
pumpkin seeds, hemp seeds, almonds, chia seed and more. Maple Holistics sent me a
few of their products to try and I thought they would be perfect for this recipe!
Goji berries are an anti-aging superfood and are perfect for trail mixes and bars like these.
I think I'll try them in a breakfast cookie recipe next!
Wrap the bars individually with plastic wrap to take with you for a healthy snack on the go!
1 1/2 cups Cheerios cereal
1/2 cup rolled oats
1/4 cup unsweetened shredded coconut
1/4 cup dried goji berries (I used Maple Holistics)
1/4 cup pumpkin seeds (I used Maple Holistics)
1/4 cup chopped almonds
1 T hemp seeds
1/2 T chia seeds
1/2 cup creamy peanut butter
1/2 cup honey
1 tsp. vanilla extract
1/4 tsp. sea salt
Line a square baking dish with parchment paper.
In a large mixing bowl combine cereal, coconut, goji berries, pumpkin seeds, almonds,
hemp seeds and chia seeds.
In a small microwave safe bowl microwave peanut butter and honey for 30 seconds.
Stir until completely smooth. Add vanilla and sea salt.
Pour wet ingredients over cereal mixture and gently toss to evenly coat all of the mixture.
Pour mixture into lined pan and press down with your hands or a spatula. Place bars
in the freezer for about 30 minutes to set. Remove from freezer, cut into squares and serve.
Store leftovers in the fridge.
