Pumpkin chocolate chip cookies are a fall favorite around here. I've been making
these delicious cookies for years because everyone loves them and they are
perfect for this time of year!
Pumpkin chocolate chip cookies are really easy to make because you don't have to wait for
butter to soften and you don't need to chill the dough. Just mix, bake, cool and eat!
Or give some away to family and friends! Everyone loves a surprise bag of cookies!
Pumpkin Chocolate Chip Cookie Pie or Pumpkin Cobbler.
Pumpkin Chocolate Chip Cookies
1 cup granulated sugar
1/2 cup canola oil
1 large egg
1 tsp. vanilla extract
1 cup pumpkin puree
2 cups all-purpose flour
1 1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. ground ginger
1/4 tsp. ground cloves
1/2 tsp. salt
2 tsp. baking powder
1 cup chocolate chips or chunks
Preheat oven to 350 degrees. Line a baking sheet with a Silpat or parchment paper.
In a large mixing bowl combine sugar and oil. Add pumpkin, egg and vanilla.
In another bowl, whisk together flour, cinnamon, nutmeg, ginger, cloves, baking powder,
and salt. Combine dry ingredients with the wet ingredients. Fold in chocolate chips.
Using a medium cookie scoop, drop cookies onto prepared baking sheet. Add a few
more chocolate chips on top of each cookie if you like.
Bake for 10-14 minutes or until cookies are set.
Makes 28 cookies using a medium cookie scoop.
