Sheet pan dinners are one of my favorite week night meals. What could be better than
preparing dinner on a single baking sheet! One pan to wash - yes please!
OXO helps make sheet pan dinners a snap with their Good Grips half sheet jelly roll pan,
silicone roasting rack, flavor injector, digital instant read thermometer and OXO
good gravy fat separator. I absolutely love my OXO baking sheet and use it all of the
time! I've made chocolate dipped peanut butter cookies, spritz cookies and more on this
jelly roll pan. It's one of my baking favorites!
The OXO silicone roasting rack helps to elevate food above fat and liquid for fast, even
roasting. It's perfect for roasts, poultry, fish, bacon and vegetables.
After all of the Thanksgiving turkey leftovers, we were more than ready to change
things up and have fish for dinner. I keep our freezer stocked with salmon fillets for
easy dinners in a snap and barbecue salmon sounded perfect for dinner.
Simply line a large baking sheet with parchment paper and place the meat and vegetables
on the pan. I brushed the salmon with barbecue sauce and drizzle the vegetables with
olive oil, salt and pepper. Easy peasy!
This sheet pan dinner only took about 10 minutes to prepare and 30 minutes to bake.
That's my kind of week night meal!!
BBQ Salmon Sheet Pan Dinner for Two
2 salmon fillets
2 T barbecue sauce (I use Sweet Baby Ray's)
2 T olive oil
salt and pepper, to taste
2 sweet potatoes, sliced
1 cup multi-color baby carrots, halved
1/2 lb. fresh or frozen green beans
slivered almonds, if desired
Preheat oven to 400 degrees.
Line a OXO baking sheet with parchment paper. Place OXO silicone roasting rack on
lined baking sheet. Place salmon fillets on the roasting rack. Brush with barbecue sauce.
Place sweet potatoes, green beans and carrots around the roasting rack.
Drizzle with olive oil and season with salt and pepper.
Bake for 25 - 30 minutes or until salmon is cooked through and vegetables are tender.
Sprinkle slivered almonds over green beans. Plate and serve.
