On Monday I shared my favorite Mini Bundt Cakes, perfect for Easter or a spring baby
or bridal shower! Today I'm sharing these pretty strawberry cream puffs, which are super
easy to make using frozen puff pastry shells. They look so pretty on a dessert table!
The filling is made with cream cheese, Dixie Crystals powdered sugar, Adams vanilla
extract and strawberry puree, made with fresh strawberries. It tastes like cheesecake!
Top with homemade whipped cream, fresh berries and just a touch of lemon zest - so
good!

Strawberry Cream Puffs
1 box Puff Pastry Cups (24 cups)
1/2 cup strawberry puree (made from 1 cup fresh strawberries)
1/2 cup heavy whipping cream
2 T Dixie Crystals powdered sugar
1 (8 oz) block cream cheese, at room temperature
1/3 cup Dixie Crystals powdered sugar
1/2 tsp. Adams vanilla extract
4-5 fresh strawberries, for garnish
lemon zest for garnish
Bake pastry cups according to directions on the box. Do not over bake!
Once baked, cool and use a small knife to remove the center of each cup.
Make strawberry puree by adding strawberries to a food processor or blender and
blend until berries are smooth.
Make whipped cream by pouring heavy cream into a stand mixer and whip until
cream begins to thicken. Add powdered sugar and continue to whip until thick
and holds stiff peaks. Pour into a bowl and store in refrigerator until ready to assemble.
Add cream cheese to the stand mixer and beat until smooth. Add powdered sugar and
vanilla and continue to beat. Add strawberry puree a little at a time. Continue mixing
and beat until fully incorporated.
To assemble pipe cream cheese mixture into baked pastry cups. Top with whipped
cream. Garnish with fresh strawberries and lemon zest.
Serve immediately or keep in the fridge up to 1 hour.
