Lately I've been craving ice cream or frozen yogurt like crazy.
My husband's all like "let's go to Kline's", which I would love to do every night, but
I don't have his fast metabolism, so I'd never be able to fit into any of my clothes.
I needed a lower calorie snack to curb my sweet tooth, so I came up with chocolate
covered frozen banana bites. Simply drip frozen slices of banana into melted dark
chocolate and sprinkle with your favorite toppings. I topped mine with sprinkles,
shredded coconut, cocao nibs and chocolate covered sunflower seeds.
These mini treats are very similar to frozen dark chocolate almond butter bites I posted
of years ago. Give them both a try!
Chocolate Covered Frozen Banana Bites
3 ripe bananas
Ghirardelli dark chocolate melting wafers
sprinkles, coconut flakes, cacao nibs, chocolate coated sunflower seeds, for topping
bamboo fork picks
Line a baking sheet with parchment paper.
Slice ripe bananas into one inch thick rounds, insert bamboo fork pick and place on
parchment lined baking sheet. Place baking sheet in the freezer for at least an hour.
In a small glass bowl, microwave chocolate wafers per package instructions.
Dip frozen bananas into melted chocolate. Sprinkle with desired toppings and place
back into the freezer. Once completely frozen, remove from baking sheet and place
banana pops in an air-tight freezer container.
