Baked Oatmeal Cups










































Hey friends!
Any oatmeal fans out there?

Oatmeal is one of my most favorite breakfast foods. It's delicious, hearty and good for you
too! Every few Sundays I bake a batch of these Baked Oatmeal Cups and then freeze them
to enjoy throughout the month. I top them with fresh berries, sliced figs, bananas or Lily's
chocolate chips. They are 3 Weight Watcher Smartpoints each using my recipe.



The oatmeal cups pop right out of these OXO silicone baking cups.
You can find them on Amazon - I love them!

Whenever you're ready to eat, just heat them for a minute or so in the microwave.
Enjoy them with yogurt, nut butter and a few extra berries.

Baked Oatmeal Cups

4 cups rolled oats
2 cups unsweetened almond milk
4 egg whites
1/3 cup maple syrup (I use Lakanto maple flavored syrup)
1 tsp. baking powder
1 tsp. vanilla extract
1 tsp. ground cinnamon

Combine all ingredients in a large mixing bowl.
Using a large cookie/ice cream scoop drop mixture into silicone muffin molds or into
a greased muffin tin. Top with fresh fruit.

Bake at 350 degrees for 20 minutes or until set.

Yield - 15 cups
